Busy, busy, busy!

Don't worry, I haven't forgotten all about you! I've just been a little busy with university work. Silly essays getting in the way, eh?

I made some white chocolate and pecan cookie dough a couple of weeks ago, kept it in the freezer and been cutting off chunks as I fancy them. I'll blog up the recipe soon, but here's a reminder why you shouldn't wander off from the kitchen when you're baking...
 Bit overdone! I think the natural light makes them appear okay, but they were a little on the crunchy side! Oh well, happens to the best of us, huh?

Apple and Cinnamon Muffins

It has been a good few weeks since my last post and I can only apologise. I started back with a really simple recipe, Apple and Cinnamon Muffins!

Ingredients: (makes 16-18 muffins)

2 cups caster sugar
3 cups plain flour
1 cup sunflower oil
2 eggs

1 tbsp vanilla extract
1 tsp baking powder
1 tsp cinnamon
2-3 large apples, peeled, cored and chopped into bite size pieces
2-3 tbsp of brown sugar (optional for the topping)

Method:

1. Preheat oven to 180 degrees. Line pan with muffin cases.
2. Mix together the oil, eggs, sugar and extract.
3. Add the flour, baking powder and and cinnamon. Mixture will be stiff.
4. Add in the chopped apples and fold the mixture to ensure the apples get to the bottom of your bowl.
 5. Using a tablespoon, fill your cases about 3/4 full. If using, sprinkle the brown sugar on top.
6. Bake in the oven for 20-25 minutes.

These are delicious both warm and cold. They are also really easy to make as it is pretty much just a 'throw everything into the bowl and mix' recipe!
